Albeiro is one of the pioneers in planting this variety in the Urraro region and is known for meticulous cherry selection. This coffee was sourced through Unblended, who are focused on building and growing careers in the coffee industry in Colombia.

About the Producer

Albeiro Ramierez has been in the coffee industry his entire life and is recognized as one of the most meticulous and organized producers. He is also one of the pioneers of Chiroso - a relatively new variety that is believed to have originated from an Ethiopian landrace variety.

This coffee was grown on his farm "El Roble" which sits at an elevation over 2,000m (6500ft).

Once the cherries are harvested and selected they undergo 15 hours of fermentation followed by pulping. The pulped coffee then undergoes an additional 48 hour fermentation, is washed, then sun-dried until the desired moisture content is reached.

Brew Guidance

This is a low density coffee and has a tendency to create fines after grinding, leading to long drawdowns.

To get the most out of this coffee, you’ll need to use a lower water temp and a pour technique that results in minimal agitation.

Suggested pour over recipe (V60):

Water: 200F

15g of coffee and 240ml (16:1 ratio)

50g bloom. Wait 30 sec. Followed by 2x Pour 95g using a slow simple centerline pour, adding a couple gentle swirls to level bed.

Drawdown should be around 3:30-45 depending on filter and grind size.
