A super clean naturally processed pink bourbon from producer Arley Vargas. This coffee will elevate you - perfect for that mid-morning when things are in full swing.

Arley leads a precise processing approach that includes a double fermentation: a 72-hour oxidized fermentation followed by a 98-hour anaerobic fermentation in barrels with degassing valves. The coffee is then dried slowly in covered dryer sheds for 15–20 days, promoting stable and consistent quality.

About the Producer

Arley Vargas works alongside his father, Alexander Vargas, at the family farm La Piragua in the village of Los Olivos. Growing up on the farm, Arley inherited Alexander’s deep commitment to producing high-quality coffee. The family emphasizes sustainable cultivation, incorporating regenerative farming practices and reforestation efforts. They produce both washed and natural coffees, creating a range of expressive flavor profiles that reflect the farm’s terroir.

Arley's father, Alexander, has been immersed in coffee his entire life, beginning work on the farm at age 15 and later dedicating himself to specialty coffee production at 20. Over the past two decades he has refined his craft through experimentation with varieties and processing methods, earning recognition as a four-time national finalist in the Cup of Excellence. To maintain year-round productivity, the farm also diversifies with dragon fruit cultivation on two hectares of higher elevation land, providing both economic stability and agricultural balance.

Brew Guidance

Natural processed coffees are best brewed with minimal agitation and full immersion. A french press or aeropress would be ideal.

A simple aeropress recipe:

Using 18g of coffee, pour 260g of water (heated to 205F) and let sit upright for 5min (with flow control). Use the inverted method with the traditional filter. Halfway through give a gentle swirl. At 5 minutes, slowly plunge into mug or carafe.
