Eulises Guzman is a third generation coffee farmer, who began learning about specialty coffee in the early 2000s. Since that time he has learned to standardize his processes and improve coffee quality. According to Eulises, coffee has enabled them to provide for the family, give his kids an education, and live with dignity.

Allow 2-3 weeks of rest after the roast date. For filter, a 16:1 ratio is a good starting point. With a fine grind and a higher water temp (207F+) use a longer ratio of 17:1.
